Diwali, also known as Deepavali, is the festival of lights. Cooking, enjoying, and sharing delectable sweets has always been a big part of the Indian tradition for this festival. Some of the sweets that are made on Diwali include Gulab Jamun, halwa, kheer, etc.
For this Diwali, we are going to recommend 5 Sweet Recipes that can be made with natural desi ghee. These recipes are perfect even for beginners.
- Sooji Halwa – Sooji Halwa is also known as Rava Kesari in South India.
Ingredients – 1 cup sooji or rava
⅔ cup of sugar (or more based on the desired sweetness)
⅔ cup of pure ghee. Reduce or increase the ghee as preferred.
2.5 cups of water. The water will change according to the consistency of the rava.
Recipe – Heat ⅓ cup of the pure ghee in a pan or kadai. Keep the heat on low and when the ghee gets heated, add in ½ cup of sooji. You can also add in 10 to 12 cashews. Mix well and start roasting the sooji and cashews.
While the sooji is cooking, take another pan and boil sugar and water to make a sugar syrup.
Keep on stirring the sooji so that the grains do not stick to the pan. Roast sooji until you see the ghee getting separated. When the sooji is roasted, you can add 2 tablespoons of raisins (kismis).
To this mixture, add the boiling sugar syrup while continuously stirring the sooji. Keep stirring as the mixture thickens. If all the water is absorbed, the sooji halwa has finished cooking and is ready to serve.
- Desi Ghee Ladoo –
Ingredients – 1 cup besan flour
½ cup desi ghee
½ cup powdered sugar
¼ tsp cardamom powder
Chopped cashews and almonds for garnish
Recipe – Heat ghee in a pan or kadai on low heat.
Add besan to the melted pure ghee and roast it on low flame, while stirring it. Continue to roast the besan for 15 to 20 minutes, till it turns aromatic and changes colour.
Turn off the heat and let it cool for a few minutes.
Add powdered sugar and cardamom powder to the mixture and mix well. Shape the mixture into small laddus by rolling small amounts between your palms. Cool it down completely and serve.
- Chandrakala Sweet –
Ingredients – 1 cup all purpose flour (maida)
¼ cup pure ghee
Water for kneading the dough
Oil for deep frying
1 cup khoya
½ cup powdered sugar
¼ tsp cardamom powder
Recipe – Prepare the dough by mixing maida and pure ghee. Add water slowly and knead it in a smooth dough. Put it aside for 30 minutes.
In a bowl, crumple the khoya and add powdered sugar, cardamom powder.
Divide the dough into small parts and roll them into thin circles.
Add the khoya mixture in the circle and fold it into a half moon shape. Seal the edges by pressing it with a fork.
Heat oil in a kadai and deep fry the prepared dough until they turn brown. Remove and drain excess oil. It’s ready to serve.
- Besan Laddo –
Ingredients – 1 cup besan
¼ cup desi ghee
½ cup powdered sugar
¼ cup cardamom powder
Recipe – Heat desi ghee in a pan on low heat.
Add besan to the melted ghee and roast it on low heat while stirring. Continue to roast it for 10 to 15 minutes until the besan turns aromatic and changes into a light golden brown.
Turn off the heat and let it cool for a few minutes. Take small parts of the mixture and shape them into laddus.
Garnish with chopped almonds and cashews and serve.
- Gulab Jamun –
Ingredients – 1 cup milk powder
¼ cup all-purpose flour
¼ tsp baking soda
A pinch of cardamom powder
2 tbsp desi ghee
¼ cup milk
Oil for frying
1 cup sugar
1 cup water
Recipe – In a bow, mix together milk powder, all-purpose flour, baking soda, cardamom powder and desi ghee.
Slowly add milk into this mixture and knead it into a dough.
Take small parts of the dough and make them into small balls, making sure there are no cracks.
Heat oil and fry the balls until they turn golden brown. Remove and drain on towels.
In another pan, make sugar syrup by bringing the sugar and water to a boil.
Add the fried gulab jamun into the sugar syrup and serve.
